Thyme, German

Thymus vulgaris – A robust and aromatic variety, German Thyme—often called Winter Thyme—is known for its earthy, bold flavor and extra cold-hardiness. Compared to French Thyme, its leaves are stronger and more intense, making it perfect for hearty dishes like roasted vegetables, stews, marinades, and slow-cooked meats. In late spring, it produces petite lavender-white blooms that pollinators adore, adding beauty and function to any garden. Tough, drought-tolerant, and long-lived, this perennial thrives in hot Georgia summers and chilly winters, making it a reliable staple for both culinary and medicinal herb gardens.

Space plants about 8–12 inches apart.

Tip: German Thyme is wonderful between stepping stones or along pathways—its woody stems release a rich, savory fragrance when brushed, creating an inviting sensory garden moment.
