Lovage
Levisticum officinale – A bold, old-world perennial herb treasured in both the kitchen and apothecary, Lovage is a striking addition to the garden with its tall stems and bright green, celery-like leaves. Given the right conditions, it can grow 4–6 feet tall, adding beautiful height and structure to herb beds and perennial borders. Lovage prefers rich, fertile soil, so we recommend amending Georgia clay with plenty of compost or planting in raised beds for best results. The leaves and stems bring a strong, savory flavor to soups, broths, and roasted dishes, while traditionally the plant has been used in herbal preparations to support digestion and overall wellness.
Tip: If you love tall, architectural herbs that make a statement, Lovage offers both dramatic garden presence and flavorful, medicinal benefits in one hardy perennial.
